Brett Hills | Vinaigrette restaurant to open near Old Town

Santa Fe restaurateur Erin Wade is bringing her upscale salad bistro Vinaigrette to Albuquerque.

Wade has signed a lease at 1916 Central Ave. SW for 3,300 square feet and will open in November, according to Brett Hills of NAI Maestas & Ward, who represented both landlord and tenant in the deal.

The location adjacent to Old Town and owned by developer Jay Rembe will have two patios.

“It will be among the most beautiful restaurants in Albuquerque,” Hills said. “Erin has a fashion background and has a sense for architectural elements and light. This will not be a normal restaurant space and will be a true dining experience.”

Insight Construction is doing the buildout.

Wade is a Harvard graduate who went to Milan to work in the fashion industry before coming to New Mexico to run her family’s 10-acre property in Nambe, which she turned into an organic farm. The farm supplies the key ingredients for her entree salads, embellished with seafood and meats.

Vinaigrette opened in Santa Fe in 2008, and Wade was considering opening her second restaurant in Southern California.

“The day before she was to fly out, I showed her this space and she loved it. She liked the surrounding neighborhoods and wanted to bring her fresh, healthy food concept there,” Hills said.
